The Rebel Baker - Inspiring Business Case Study Video

For the 2025 Start Up Loans Ambassador Programme, we travelled to Scotland to film an energetic and inspiring business case study video with Rachel Munro, founder of The Rebel Baker, a fast-growing allergen-free manufacturing bakery producing frozen cookie pucks for the food service industry. Filmed at her bakery in the North Harbour Industrial Estate, this piece captures Rachel’s entrepreneurial journey and showcases how effective business case study video production can bring founder-led stories to life. It also demonstrates her rapid scale-up to producing over 10, 000 cookies a day and the role Start Up Loans has played in helping her turn bold ideas into a thriving manufacturing business. 

About The Rebel Baker

The Rebel Baker began as Rachel’s personal mission to challenge the norms of the baking industry. After appearing on Gordon Ramsay’s Future Food Stars, Rachel transformed her experience and new-found confidence into a specialist allergen-free bakery that now supplies cafes, restaurants and major distributors with high-quality frozen cookie pucks.

Her brand blends creativity with technical expertise, making a product that is safe for allergen-sensitive customers without compromising on taste or texture. With strong demand already in place and a new contract with Bidfood emerging, The Rebel Baker is entering a new phase of accelerated growth and national reach.

Capturing the Story – Our Approach

For this Ambassador series, we applied our experience in business case study video production to create dynamic, social-first content built around Rachel’s personality and brand. Our brief included capturing: 

  • A 60-120 second YouTube asset (16:9)
  • A 30-60 second reel introducing the business (9:16)
  • Five 60-70 second reels per ambassador
  • A 30-second paid-media-ready videos for Meta (1:1)
  • A mix of still photography for social and press

With Rachel’s bakery offering strong visual storytelling opportunities, from its signature pink floor to its industrial-chic office space and hands-on production zones, our aim was to create footage that feels vibrant, modern and highly shareable.

We filmed with a two-camera setup using Sony FX9 and FX6 bodies, supplemented with lighting, full sound kit and a stills camera for portrait, action and behind-the-scenes image. Our team included Producer Hannah Manning, Camera Op Matt Wild and Camera Op Kate York, with BBB’s Andy Binkiewicz attending on-site.

Dynamic Interviewing

In line with BBB’s guidance for the Ambassador Programme, we avoided static, traditional interview setups. Instead, we captured relaxed, conversational moments with Rachel across multiple backdrops, walking through the bakery, demonstrating processes, interacting with equipment and showcasing a small batch production run arranged specially for filming. 

This approach allowed us to emphasise the personality behind the brand: bold, confident, humorous and candid about the challenges of scaling an allergen-free manufacturing operation. It also meant we could gather a variety of short soundbites perfect for Instagram Reels, TikTok-style edits and paid ads.

The Story Themes We Captured

Throughout the interview, we explored themes designed to support ongoing Start Up Loans content strategy, including: 

  • How the Rebel Baker name came to be and why challenging industry norms matters
  • The hurdles involved in allergen-free manufacturing, from certification to customer trust
  • The highs and lows of running a fast-scaling food business
  • Rachel’s Start Up Loan, when she took it, how much she borrowed and how it accelerated growth
  • What the loan allowed her to achieve that wouldn’t have been possible otherwise

Visual Style & Deliverables

This project followed Start Up Loans’ updated brand identity, including dialled-up energy, colour and motion graphics for transitions. We prioritised a fun, casual tone with quick cuts, short B-roll bursts, dynamic angles and confident to-camera delivery.

The final package included:

  • Fast-paced inspiration clips for paid media
  • A mixture of slow-motion and real-time B-roll
  • Still photography in both landscape and portrait formats
